  • Christmas = Gingerbread Biscuits!

    by Maria

To me Christmas smells of ginger, cinnamon, cloves and nutmeg. I love Christmas and I’m sure many of you do too. It’s almost impossible to resist the Christmas spirit; the decorations, the lights, the music and of course the food make this time of year a special one indeed. Every country has their own food traditions but the cut-out gingerbread biscuits are a popular...

  • Very Moist Chocolate Cake (Dairy-Egg-Nut and Gluten Free)

    by Maria

Every time I read ‘free from’ gluten, egg, nut or dairy I feel lucky not to be allergic to any of those delicious ingredients. When my baby was just one month old, she started crying in pain after every feed. The kind advice I received on how to soothe her didn’t work so in the end I decided to change my diet, quitting dairy,...

  • Yummy British Scones!

    by Maria

Scones are a quick bread, they can be savoury, sweet or plain. They are very popular in the United Kingdom, a classic treat from Devon (England) where they produce the best cream and butter of the country! For me the way to enjoy scones is to eat them hot, straight from the oven. Add regular butter and it is heaven! But the English love...

  • Pisco Sour, Chile v/s Perú

    by Maria

Chileans and Peruvians have their differences, they argue about football and politics, but I would like to write about something we have in common. Something that we love equally and both call our national cocktail: the Pisco Sour. Peruvian restaurants are everywhere in London and I am thankful for that.  Now I can go out and enjoy a delicious Pisco Sour this side of the...

  • The Easy Affogato

    by Maria

Affogato is the ideal dessert when you don’t have anything for dessert! It is originally from Italy and requires only two ingredients; fresh coffee and vanilla ice-cream, mixed at the time of serving. It can’t get any easier than that! Aside from being easy and delicious it is versatile because it can be dairy-free, gluten-free or even decaf, depending on your choice of ice-cream...

  • Le Gâteau Au Yaourt!

    by Maria

When my eldest daughter was about one-year-old I read my first ‘mummy’ book called ‘French Children Don’t Throw Food’. An interesting read for a first time mum whose child obviously loved to throw everything from the dinner table. In all honesty I can’t remember half of the book. But I do remember that I enjoyed learning about the Parisian culture and how French parents...

  • The Fabulous Matcha

    by Maria

It has been all the rage in NY and London for a while. It is a ‘trendy’ tea because of its flavour and health benefits. It has a strong but pleasant green tea taste and its fluorescent colour is the perfect contrast for the gloomy British winter mornings! Matcha tea is the most famous tea in Japan. The tea ceremony is performed around it...

  • 8 Reasons Why Your Meringue Fails

    by Maria

Meringue is a great complement to many desserts; because of its beauty it stands out on any sweets table. It is also 100% fat free and protein rich. However it contains high levels of sugar which is essential to give the meringue stability. This means that it is hard to replace sugar with other sweeteners. Meringues are made of only two ingredients, but the...

Cinnamon Walnut Cake, Moist cake.

Moist Cinnamon Walnut Bites

by Maria

Autumn calls for cinnamon, coffee, and a cosy blanket. There’s nothing quite like coming home feeling a bit chilly and catching the scent of something baking in the oven. It’s one of my cherished childhood memories. This yogurt cake, with its warm notes of toasted walnuts and cinnamon, is the perfect companion for crisp autumn days—comforting, wholesome. This recipe is a small batch suitable for use with silicone moulds. If you’d like to bake it in a loaf tin, simply double the recipe. At the end, pour half of the batter into the tin, add the walnut filling, and then top with the remaining batter. Silicone moulds are very easy to use. I grease them with butter just to be on the safe side, even though they’re non-stick. I bought this mould at Michael’s for around $6, just to show that you don’t need to purchase expensive baking equipment to create charming baked goods.
